Our Cheeses

As a family we’re passionate about fine foods, and over the last ten years we have been happily slaving away at the Traditional Cheese Dairy, developing a unique repertoire of artisan cheeses we’re proud to call our own.

All our cheeses are made using traditional methods, and only ever from raw milk. Using this pure, natural product is the only way to capture the essence of the meadows and retain the full goodness provided by the earth, sun and rain. Raw milk from grass-fed cows is one of nature’s most wholesome ingredients. Nothing need be added to improve it. No vitamins. No minerals. No enriching. It's a complete food, as is the cheese we make with it.

Today our dairy produces a wealth of different cheeses, carefully created to please the widest variety of palettes. And because we only ever use animal-free rennet, all our cheeses are approved by the Vegetarian Society, ensuring that everyone can enjoy our delicious products. From the savoury, full-bodied flavour of our traditional farmhouse Broad Oak Cheddar, to the delicate taste, and sticky yet silky texture of our award-winning Burwash Rose, our refined and perfected British cheese recipes cater for every taste and occasion.

Aside from the many health benefits, one of the greatest joys of making cheeses with fresh raw milk from grass-fed animals, are the subtle but distinctive seasonal variations you’ll find within their flavours. Cheese made from spring and summer milk can taste quite different from a cheese made in the winter. During the spring and summer the animals feed on rich grasses, buttercups and clovers that impart sweeter, floral notes. Winter cheeses are bolder and more savoury, as during this time the animals feed mostly on hay and tasty root vegetables.
